Claudio was born on April, 4th in 1962 and grew up in a home where his Grand Father paid great of attention to the quality of food and cooking.
The aroma of stewed and roasted meats, the scent of spices such as nutmeg for the preparation of game, and of course the unique fragrance of fresh pasta made by his mother.
All things that at the age of 14, brought him to play hookey from school while working secretly as a waiter in one of the areas finer restaurants in order to follow his passion for the culinary arts.
Here he first learned how the pleasure of the palate could bring people of different ethnic backgrounds together from all over the world.
It was only natural that from the dining room he would shortly pass into the kitchen, and at last whent back to formal training as a cheff.
His passion for excellent cuisine grew even more, and so did his passion excellent wines.
In 1985 he became a professional Sommelier and shortly afterwards he took on the management of a restaurant in the nearby city of Florence
